1/2 cup millet
1/2 cup raw cashews, optional
2 cups hot water
1/4 cup soy creamer, French Vanilla best, as needed
1/4 cup honey (or 1/3 cup raw sugar or other alternative)
2 Tbsp lemon juice, fresh best
1 tsp vanilla extract, optional
Just Like Graham Crust (Gluten free option avail) or Nutty Crust
Bring millet and water to a boil, reduce heat and let simmer on very low for 40 minutes. Place into blender with remaining ingredients, except soy creamer & Raspberry Sauce. Blend until smooth, stop, stir, blend, stop, stir, blend, etc. Adding soy creamer as needed, the less you use the firmer the pie will be. Pour into baked 9” crust and top with fruit topping. Refrigerate to set, about 2 to 4 hours. Can set in a hurry - use the freezer for 1 hour.
Preparation time: 15 to 20 minutes
Chilling time: 3 1/2 to 6 hours
Ready in: 5 to 6 hours
